After you have put away potatoes for the winter in a cool place and its
time to sprout and plant, remove any sprouts that are over 6 inches long
from the potatoes. The newer, smaller and thick sprouts is what will help theplants to grow. If no sign of new sprouts have appeared or are too small, speed the sprouting process up by placing the potatoes in a warm, dimly lighted place for a few weeks. The best tubers to plant are the one without signs of disease.
The usual recommended temperature for proper storage of potatoes over the winter
is between 4 and 7 degrees Celsius, in a dark, well ventilated room. If you can not maintain this temperature you may have to remove permature sprouts as mentioned above.
